Green Beans – Now for Something Completely Different!

Tired of the same old green beans lying in a limp pile on the side of your plate?

Forget the butter and bacon. Give ‘em a little inspiration and a whole lot of healthy favor with a few shallots* roasted in olive oil. For 1 lb. of Green Beans (fresh or frozen), peel 3 or 4 whole shallots, place them in a shallow pan, drizzle with olive oil and roast in an oven at 350 degrees until they are soft and lightly brown, about 20-25 minutes. When done, cut into halves or quarters, keep warm.

Cook beans to your desired doneness by boiling or steaming.

Drain the beans completely, mix with the shallots and a little of the roasting olive oil.

Finish with salt and pepper to taste and a few drops of fresh lemon juice.

Serve and enjoy this fresh and lively taste with no added butter or animal fats.

*Shopping Tip: Shallots can be pricey at the supermarket. Check your local Asian market or ethnic store for better prices on shallots and other fresh produce and herbs.
