<p><strong>Roasted Garlic and Olive Oil</strong></p>
<p>1. Buy a container of peeled garlic cloves (available at your local mega discount store).</p>
<p>2. Put garlic cloves and a few peeled shallots into a small roasting pan. Cover with extra virgin olive oil.</p>
<p>3. Roast in oven at 325F until soft and golden. About 15-20 minutes.</p>
<p>4. Strain and keep the garlic/shallot infused olive oil. Use it to flavor veggies and salads.</p>
<p>5. Cover the roasted garlic &amp; shallots in fresh olive oil. Cool and save in the refrigerator. It will keep indefinitely.</p>
<p>6. Mash and use roasted garlic cloves in place of raw garlic in your savory cooking &amp; salad dressings.</p>
