<p>Tired of the same old green beans lying in a limp pile on the side of your plate?</strong><br />

<span style="font-family: Calibri;"><span style="line-height: 115%; font-size: 14pt;">Forget the butter and bacon. Give ‘em a little inspiration and a whole lot of healthy favor with a few shallots* roasted in olive oil. For 1 lb. of Green Beans (fresh or frozen), peel 3 or 4 whole shallots, place them in a shallow pan, drizzle with olive oil and roast in an oven at 350 degrees until they are soft and lightly brown, about 20-25 minutes. When done, cut into halves or quarters, keep warm.</p>
<p>Cook beans to your desired doneness by boiling or steaming.</p>
<p>Drain the beans completely, mix with the shallots and a little of the roasting olive oil.</p>
<p>Finish with salt and pepper to taste and a few drops of fresh lemon juice.</p>
<p>Serve and enjoy this fresh and lively taste with no added butter or animal fats.</p>
<p>*Shopping Tip: Shallots can be pricey at the supermarket. Check your local Asian market or ethnic store for better prices on shallots and other fresh produce and herbs.</span>

<p>Add 1 tsp. of beef or chicken base (available it in the soup section of your market)*</p>
<p>Add 1 tsp. of chili powder</p>
<p>Stir everything together until well mixed. Adjust heat to bring pot to a low simmer. Cover and cook until liquid is absorbed and rice is soft and fluffy.</p>
<p>Serve beside your favorite meat or fish and enjoy!</p>
<p>Chef’s Tip: Boxed or canned stocks may be substituted. If using stock, measure to replace the water. Do not use cubed or powdered bullions.  Taste the completed mix before adding salt. Bases contain a lot of salt.  Additional salt usually is not needed.</p>
